Are you ready for a South East Asian treat. This week we wanted to really explore the simplicity of Thai ingredients. So with fresh onions, ginger, galangal, lemongrass, kaffir lime, coconut milk, and pumpkin we set out to create a wonderful soup that is not only healthy but complex, balanced, spicy, and utterly delicious. We started off by roasting the pumpkin, sautéing the onions, and sautéing the ginger. We then added our very own Thai curry and allowed the flavors to become melodious. Next we added coconut milk, our vegan stock, and the roasted pumpkin. Finally it was all pureed in our mixer. WOW!! We suggest that you garnish this soup with Thai basil, cilantro, peanuts, coconut flakes, or red chilies. Also you might want to drizzle a touch of coconut milk over the top for a velvety finish.. Feeds 1-2 adults.
