I wasn’t originally goin to put this on the menu but at the request of several customers we decided to make a small amount available.  This is a trial run to see the interest in this product so we only have a very limited quantity.  Unlike in the United States Pork here is very expensive and this cut unfortunately is no exception.  We use this product to add unbelievable flavor to out stocks or soups.  We brined this hock for 1 week and smoked it using a nice Hickory wood.  Sold individually.  This is more of a special treat unless there is a large enough demand for hocks.  Let me know.
