This new and amazing menu item will keep you wondering as to how we were able to make the chicken so tender and so juicy. The biggest issue with smoked chicken is that it tends to be really dry. Well after 20 chickens and a lot of experimenting we have found the perfect balance between temperature, time, and smoke. Our smoke profile consist of a little hickory and some mesquite. We wanted to keep the bird fairly pure so we only lightly seasoned it with a nice rub. The end result was a delicious smoked chicken that really steals the show. Each portion is half a chicken and consist of a breast, a thigh, a wing, and a drumstick.
