Nduja, one of my absolute favorite pieces of charcuterie.  This beautiful creation comes from Southern Italy around the area of Calabria.  Said to have originated during the late 1700’s around the time of Napoleon.  inspired by the French and using the Italian farmers style of meat preservation this lightly smoked spicy salami is a real piece of history.  This salami uses the actual Calabrian pepper from Italy and is cold smoked for 18 hours and aged for 9 months.  The end result will leave you speechless.
