We are so excited to have a very limited amount of this product this week. Bresaola is a salted and air dried cut of beef. It has been drying in our chamber for roughly 3 months and the end result is spectacular. We used the “Eye of round” cut for this project and seasoned it with thyme, bay leaves, and rosemary. The concentration of flavors in this bresaola is so fresh. Made in the traditional Italian/Artisan way this Bresaola knocks the socks off any commercially produced charcuterie. Taste the difference. Can be served as is or can be used to add a personal touch to your favorite appetizers or dinners. Goes great with red wine and a nice cheese.
