When was the last time you enjoyed a delicious plate of Hoppin’ John? This wonderful southern dish (that has increasingly become more popular over various other parts of the United States) is traditional during the New Year. Creamy and perfectly cooked Black Eyes Peas mixed with sliced Ham Hock and Smokey Bacon all tossed in a vegetable mix (Celery, onion, and bell pepper) make for a wonderful and delicious dinner. Traditionally this dish is served over a bed of rice with a side of collard greens and cornbread for New Years. Rice and Collard Greens are not included with this entrée. Serves 1 – 2 Adults.
